 The below video could have been taken here in Boone last night. Same outfits, same song, even similar stage look and YES she did do little clog step or two. Really enjoyed how relaxed they both were on stage. This was just plain fun to be part of in the audience. ENJOY

On the Sixty-Sixth Day of Summer

Snippets of today.
Opened my eyes to this reflection from somewhere on the wall

David picked this bright hello for me near dusk last night. Placed her on the bathroom window seal
Malachi pulled up his step stool  hoping to see a worm from an apple


I have wanted to catch a picture of the one of the hummingbirds that has been visiting all summer. By the time I cleaned my hands from peeling and cutting apples the bird would be gone. So...

On the Sixty-Fifth Day of Summer

OK, the excitement is building. Think I'm gonna post a Gillian Welch video each day until Saturday. Who knows, may post one on Saturday too.  EXCITEMENT!!!!!!!



Also cooking two things for dinner I have never cooked, that I can remember. I helped Emma cook Quinoa once. Will post pictures this evening.

Here you go....Cooking patty pan squash and quinoa for the 1st time.

Going to cook the patty pan squash given to me from a friend

Boiled the patty pan for 8-10 minutes til tender

Cooked Quinoa for the first time all by myself

Cleaned out the fridge of vegetables ...carrots, a few black olives, spinach, onion, bell pepper, garlic and a couple of corn bread squares.

Pureed it all together  plus the pulp from the patty pan

Added the vegetables from the food processor to the quinoa.. Got it all hot together in the pan, then stuffed the squash shells and baked it for about 25 minutes. I put cheese on top of a couple of squash  to melt the last two-three  minutes.

Then I finished up the squash from our garden...
I blanched and froze the yellow squash, I cooked down the left over spinach and froze that. Then I cut up the cucumbers, put them in vinegar with salt and pepper to go with dinner.

Today we felt the earthquake from Virginia.  Hard to get your mind around something so unfamiliar as you feel the earth move under your feet.  Yes, I heard the Carol King song play in my head from the 70's as I wrote that line.

On the Sixty-Third Day of Summer

I have thought of daughter, Anna all day.  My "baby" turned 22 years old.  How did our youngest child get this old this fast. She is in a wonderful time of life.  I am a thankful mama.

Anna all snuggled and safely kept.  You are going to have a new brother or sister in August.  The Spring before Anna was born.

I didn't take pictures of the shrimp, veggie sausage jambalaya. First time I have ever made jambalaya.  I must say it turn out good. Made cornbread and salad on the side. Happy Birthday dinner for Anna.
