I Skyped with my Sister

I had quite a bit of white corn tortillas in the refrigerator. They were drying out and we weren't using them fast enough. Afraid they would go moldy on me. So, I made tortilla chips out of them while I Skyped with my sister.

Cut the rounds with a pizza cutter into triangle wedges. Put on a  lightly greased baking pan at 400 degrees add salt, pepper, any spices.

Baked results after about 8-10 minutes

These over "roasted"  almost burned  as I got sidetracked talking to my sister over Skype.

Finishing the day. Candles.....AGAIN...One of my favorite things....candles at dusk.

Date Bars

I have always looked for ways to stretch our budget. Oats were cheap, especially in the '80's when we were rearing our five children. I found this recipe in my favorite More with Less cookbook. It has been one of those put what you have in the middle of the crust recipes. I used raisins mostly when the children were little. I have used dried apricots as a treat from a yearly gift sent by family in California. One of our favorites have been date bars. I buy dates in bulk from our co-op.
We had dates in the cabinet from the co-op order last month. They beckoned the recipe. Makes a tasty breakfast and easy fruit bar for David to take to work. 

I use a mixture of flour. Whole wheat and unbleached.

Topped with plain Greek yogurt. Like the tart and sweet together. 

Especially good with a good cup of coffee.

A Few Homemade Sauces

Wanted to get ahead for the dressings and sauces we will use this week. Two types of BBQ sauce. A ranch-yogurt dressing. A balsamic vinaigrette.
Sauces in recycled bottles
BBQ Sauce #1~the tall bottle~
A barbecue sauce from my childhood. Eastern North Carolina Style.
2 cups apple cider vinegar
2 TBS brown sugar or molasses
1 TBS crushed red pepper flakes
A healthy dash of Texas Pete
1/2 tsp or so of black pepper
Place all ingredients in a sauce pan bring to a quick boil. Turn off heat. Let cool and place in a jar.

BBQ Sauce #2
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
4 TBS brown sugar if you'd like..taste test before adding so not so sweet
1/2 TBS black pepper
1/2 TBS freshly minced onion or onion powder
1/2 TBS mustard
1 TBS lemon juice
21/2 TBS Worcestershire sauce
Good dash of Texas Pete or about 1/8 tsp of cayenne

Add all ingredients in a sauce pan. Simmer for a few minutes. Cool and store in a jar.

Simple Balsamic Vinaigrette
1/2 cup balsamic vinegar
1/2 cup olive oil
4 TBS spicy brown mustard
2 tsp minced garlic
2 tsp black pepper

Whisk all ingredients well in a bowl or shake well in a jar.

Ranch Yogurt Dressing
1 cup Greek yogurt
2 TBS mayonnaise or 1/4 cup of buttermilk
1/2 tsp each of dried parsley, dill weed, chives, black pepper. Make it with the spices-herbs you would like to add.
1/2 tsp-1 tsp minced garlic and onion

Add more yogurt if you like a thick dressing or more buttermilk for thinner. I always double this.

Put all ingredients together in a bowl. Whisk well. Store in a jar in refrigerator of course.
